Grow, Share, Cook – Week Two

This week’s bag contained spinach, lettuce, shallots, potatoes and apples (which I forgot to include in the photo). These are all things I would use a lot anyway so it was easy to make meals from!

I used most of the spinach and some of the potatoes in a curry along with chickpeas and lentils. I would like to say that I served the lettuce with it because I’m trying to be super healthy but the truth is, I was feeling too lazy to wash and cook rice.

I used the potatoes and shallots to make hash browns which I cooked in an air fryer to use less oil. They were so yummy in a sandwich with ketchup and some of the spinach!
